Cheesy Shanghai Mooncake 芝士上海月饼 (中英加图对照食谱)



I have actually scheduled this week to bake more varieties of mooncakes but due to unforeseen circumstances, my girl injured her toe and I had to bring her to the hospital to see the Pediatric Orthopaedic and more visits to the hospital as my boy has to see Pediatric Ophthalmology and mum has to undergo minor surgery. So, I am left with just one day to bake before the mid-autumn festival this Sunday. I have chosen to try out this cheesy Shanghai Mooncake which is so much easier as compared to the traditional Cantonese style mooncakes. It turned out to be fragrant and tasty. Do give it a try if you have some time. :)

Cheesy Pineapple Tarts - Goat shaped 芝士凤梨酥- 山羊造型 (中英食谱教程)



Just one more week to the Lunar New Year and we will be welcoming the Goat Year. I have seen many bakers baking the lovable sheep cookies but I wanted to do something different. So, I put on my thinking cap and ponder on how to transform my round pineapple tarts into a goat shape. Finally, I work out something this afternoon and here's sharing with you my new creation of a goat pineapple tart. Hope you like it!

Smooth and Creamy Vanilla Custard 柔顺又滑腻的香草卡士达奶油 (中英食谱教程)



Here's a nice, smooth and creamy vanilla custard which I have made 2 days ago and would like to share it with you. It is also my first time using vanilla bean. Yes, no kidding, I have only used vanilla extract and vanilla paste in my bakes so far. 


这是两天前做的香草奶油,觉得口味很棒,跟大家分享。这也是我第一次使用香草荚。烘烤至今只用过纯香草精和香草糊。

Chicken & Potato Pies 鸡肉马铃薯派 (中英食谱教程 )






This is my favourite chicken and potato pie recipe which uses yoghurt to make the pastry dough. Yoghurt is one of my favourite baking ingredients as it has probiotics (good bacteria that can crowd out the harmful micro-organisms in our digestive tract which can cause intestinal infections), loaded with vitamins, power boosting proteins, bone-building calcium and many other benefits. This healthy Peach Cheese Tarts recipe originally uses sour cream as one of the ingredient. For a healthier choice, I have replaced it with Greek Yogurt. These fruity Cheese Tarts is really appetizing and great for an after meal dessert.

Baking Taitai's Breadmaker Multigrain Loaf

This is another one of my experiments with the breadmaker. This time I wanted to create something more wholesome so I bought the usual organic ingredients like the high protein 12% flour, wholemeal flour and raw sugar (you can find the photos of how the packaging looks like in my earlier post here) and a new ingredient - Organic raw wheat germ to add to turn it into a super healthy recipe !

Baking Taitai's Breadmaker basic loaf recipe 烘培太太面包机的基本面包配方 (中英食谱)

  

I got my Kenwood breadmaker two months ago and it's a wedding anniversary gift from my the other half. Actually, I was the one who requested for it and was gleaming with joy when he agreed to buy for me. Well, you see I have a really small kitchen at home and there is simply no more space for another 'toy' as the counter top sits other 'toys' like the KitchenAid mixer and Philip's Airfyer which I have added over the two years since I picked up baking.  So, this breadmaker have to make do with a space on my dining table. (update: It is now sitting on my newly built Dry Kitchen top :) ) I am happy with this new addition as it has helped to churn out healthy homemade bread for me without much effort. Especially on super busy days, I have no time for conventional oven baking, I just let the breadmaker do all the job for me and I still get to enjoy a freshly homebake loaf without any preservatives. The heavenly smell of the bread lifted my mood too.

You can easily make ice-cream at home without owning an ice-cream maker. I chance upon this Chinese translated ice-cream recipe book written by a Korean who owns a patisserie - BaQueen.
The first recipe which I tried from the book is the Matcha ice-cream as my daughter and I love Matcha desserts. This dessert turns out to be superlicious and if you are a matcha lover like me, you must give this a try! No regrets!
