Easy Salmon Fish Pie

My family loves eating salmon fish and I will buy it weekly for my cooking needs. I get my weekly seafood supply from WholeFish.

Besides seafood, you can also find greens and vegetables, prepackaged sauces and condiments as well as Swee Choon’s frozen dim sum on Whole Fish online store.

This simple salmon fish pie makes my kids really happy as they like mashed potatoes and get to enjoy the best of both worlds!

Easy Salmon Fish Pie

Ingredients:
450g salmon fillet from WholeFishde-skin and cut into small chunks
750g potatoes, peeled and quartered (also available on WholeFish
250ml + 25ml milk, room temp
30g + 50g salted butter
20g plain flour
1 medium brown onion, chopped
50g shredded cheddar cheese (I used Colby Jack)
50g frozen mixed vegetable
salt to taste
1 tbsp finely chopped parsley
finely grated zest from 1 unwaxed lemon

Methods: (Refer to cooking video HERE)
1. Preheat the oven to 190°C (or 170°C fan forced)

2. Boil potatoes for about 12 mins until tender. Drain and mash with 30g butter and 25ml milk. Season with salt and pepper, set aside.

3. Add butter, chopped onions and flour in a cooking pan over medium heat. Mix well before adding in milk gradually, followed by shredded cheese. Whisk until the sauce is thick and smooth.

4. Add in some salt, salmon chunks and mixed vegetables. Stir and mix well for a couple of minutes.

5. Transfer to a baking dish. Sprinkle chopped parsley and lemon zest evenly over the mixture.

6. Spoon on the mashed potatoes. Use a fork to spread the mash over the pie and create a rough texture on top.

7. Bake in the oven for about 30 minutes, or until golden-brown and bubbling.
