Matcha Castella Cake & CNY Giveaway! 抹茶长崎蛋糕与赠品活动!(中英加图对照食谱)

This is an overdue post and I finally found time to share this cake recipe. 

Last October, my dear friend Bee encouraged me to bake this Matcha Castella (also known as Kasutera) cake using the home brewed sweet glutinous rice wine that she has given me as the cake will be more flavorful. Indeed, the cake turned out so delicious that everyone commented that it tastes exactly like the ones I brought home from Korea some time back. I had bought two boxes of Green Tea Castella Cake from the Paris Baguette bakery at Seoul-Incheon International airport before boarding the plane home. We love the taste of the cake and I am so glad that I can replicate and bake it at home now. I tried baking the cake again using store bought Japanese mirin and the taste is just as good!


This sweet dessert wine is love at first taste, it is a cross between Sake and Makgeolli and I love drinking it!

Healthy Avocado Popsicles



This is my family's favourite avocado milkshake which I have turned into popsicles. It makes such a rich, creamy and refreshing treat to enjoy during this hot spell! Avocado is high in nutrients, full of vitamins and rich in healthy fats, protein, sodium, potassium, magnesium and calcium. It has health benefits like making your skin glows, reducing cholesterol, anti-ageing, reducing blood pressure, maintains healthy heart etc.

French Classic & Matcha Madeleines 法式经典与抹茶马德莲蛋糕 (中英加图对照食谱)




The Madeleine is a traditional small cake from France. It is actually a very small sponge cake with a distinctive shell-like shape acquired from being baked in pans with shell-shaped depressions. There was a saying that this french pastry was created in the 19th century by a lady pastry cook, Madeleine Paulmier hence it was named after her. 

I made these lovely french cakes together with my 8-year-old boy two days ago. He came home in high spirit as he is the only one in class who scored full marks for his Mathematics examination paper which he took on Monday. Mathematics is his favourite subject, thus he is overjoyed! We decided to make some madeleines. I did the cake batter for the classic Madeleine while he watched. When I am done, he did the cake batter for Matcha madeleines all by himself! We had to put the batter into the fridge overnight, this is necessary so that the bumps or humps will develop during baking. 


We have an enjoyable time baking, bonding together and eating these tasty french cakes. Do give this simple recipe a try and wishing you a lovely and blessed weekend. :)

The weather has been getting really warm and making these healthy and yummy popsicles seems to be the right and wise thing to do to beat the heat! I have used the below Tovolo Rocket and Star shaped popsicles moulds and my kids really love these fun shapes! My son loves especially the rocket popsicles and said "3-2-1- Blast off" before he popped it into his mouth...lol!

Homemade Mango Sago Pomelo 自制杨枝甘露(中英食谱)

 

I have a pomelo sitting on my kitchen counter top since Chinese New Year. So, when my hubby bought some Thai honey bee mangoes last weekend, I quickly used both fruits to make one of my favourite dessert - Mango Sago Pomelo. Easy Blueberry Honey Cupcakes 简易蓝莓蜂蜜小蛋糕(中英食谱)


This week is our local school break, I am usually busier with the kids around and I can't try recipes which take up too much time. I saw this simple honey cupcake recipe while browsing through a Chinese recipe book by 君之 and decided to give it a try with my 7-year-old boy. It's been a while since he bakes together with mummy, our last bake bonding session was when we baked the Number cookies using the Tovolo number cookie cutters last November. This recipe is rather easy, he could do almost all the steps except the whisking of the eggs using the electric mixer which I gave him a hand. We have also added blueberries to the batter for a fruity taste. He was really happy and proud to bake these delicious and soft honey cupcakes.

Matcha Chiffon Cake 抹茶戚风蛋糕 (中英食谱)




I have never baked a chiffon cake in a tube pan before. (other than the Hokkaido chiffon cupcakes) I was told that the failure rate of baking a chiffon cake is rather high so I was a little nervous but delighted that it turned out alright on my first attempt. :)

A chiffon cake is a very light cake made using vegetable oil instead of butter and it is so versatile that you can come up with many variations of it.

Baking Taitai's Black Sesame Buns with Cranberry Cream Cheese Filling



This is another recipe which I use the Tahini Black Sesame Spread. This spread was first used in making Black Sesame Cupcakes in my earlier post here. When black sesame is used as one of the ingredients to make the bread dough, the nutritional value will increase, so why not give it a try?
