Banana Blueberry Yogurt Pound Cake 香蕉蓝莓优格磅蛋糕 (中英加图对照食谱)



I haven't bake a pound cake for quite some time and decided to try a new flavour. Since I've got honey greek yogurt, bananas and blueberries at home, I decided to combine these ingredients to bake a healthy one, at the same time try out my new Mastrad Savarin Cake pan. This cake turns out moist even though butter is cut substantially. This is due to the generous amount of Greek-style yogurt and mashed bananas which are healthy substitutes for fat in this recipe. 

好久没烤磅蛋糕了,也想尝试新口味, 就做了这健康的香蕉蓝莓优格磅蛋糕。这食谱用了大量的希腊式优格和香蕉,所以即使奶油的份量减了许多,蛋糕的质感依然湿润。

Blueberry Hokkaido Chiffon Cupcake (cooked dough) with Blueberry Swiss Meringue Buttercream 蓝莓北海道戚风杯子蛋糕 (烫面)- 蓝莓瑞士奶油霜(中英食谱教程)


My second attempt using the cooked dough method to bake the Hokkaido chiffon cupcake and first attempt to whip up Swiss meringue buttercream (SMBC) and in Gula Melaka flavour last week was super well received. Many of my readers have tried and given big thumbs up for both cupcake and SMBC recipes. I have fallen in love with this cooked dough method* cupcake which yields softer and delicate cake texture and also fallen in love with the Swiss Meringue Buttercream which is very stable and can be left in the room temperature for many hours and still hold its shape without melting away. 

*Cooked dough meaning 烫面 in Chinese. The flour used in the chiffon cake recipe is cooked in warm oil before mixing with the meringue prior to baking as it will yield a softer and delicate cake texture.

* 烫面解释 (来自君之) :烫面戚风,最关键的是“烫面”的过程,所谓“烫面”,从名字上理解,就是被烫过的面粉。最简单的解释是,面粉里的淀粉和蛋白质,在高温下改变性质后,产生很好的增稠力。也因为有烫面的存在,我们能够在戚风的配方里加入更多的液体,使我们做出的戚风在原本就细腻柔软的基础上更进一层楼,变得更柔更软更可口了。将面粉“烫”熟,使面粉内的淀粉发生糊化,进而吸收更多的水分。不过面粉不能直接用煮开的液体来烫,那样温度太高面粉会过度熟化,只需将液体煮热就可以。

My kids love this Hokkaido chiffon cupcake so much that they asked me to bake it again. As I have a few boxes of fresh blueberries in my fridge, hence the decision to modify my earlier recipe to make this Blueberry Hokkaido Chiffon cupcakes and Blueberry Swiss Meringue Buttercream. It is so scrumptious that I had 3 servings at one go! My kids couldn't stop eating at one too! 

两天前,家里的小朋友吵着我再做这款蛋糕,刚好冰箱里有几盒新鲜蓝莓,就尝试做蓝莓口味的。也做了蓝莓瑞士奶油霜来搭配,真的是太好吃了!我一口气吃下了三个呢!

Blueberry Chiffon Cake 蓝莓戚风蛋糕 (中英食谱教程)



I am beginning to enjoy baking chiffon cake as it is really versatile and one can make it in a wide variety of flavours using fruit puree, jams, juices, extracts, citrus zests, liquer, etc. Here's sharing my 3rd chiffon cake using fresh blueberries shortly after baking a Gula Melaka flavoured one.

Blueberry Frozen Yogurt 蓝莓冷冻优格(中英食谱教程)


I am using the Tovolo Ice-cream scoop which provides the perfect scoop and keeps the counter clean.

Easy Blueberry Honey Cupcakes 简易蓝莓蜂蜜小蛋糕(中英食谱)


This week is our local school break, I am usually busier with the kids around and I can't try recipes which take up too much time. I saw this simple honey cupcake recipe while browsing through a Chinese recipe book by 君之 and decided to give it a try with my 7-year-old boy. It's been a while since he bakes together with mummy, our last bake bonding session was when we baked the Number cookies using the Tovolo number cookie cutters last November. This recipe is rather easy, he could do almost all the steps except the whisking of the eggs using the electric mixer which I gave him a hand. We have also added blueberries to the batter for a fruity taste. He was really happy and proud to bake these delicious and soft honey cupcakes.

Blueberry Whipping Cream Pound Cake蓝梅鲜奶油磅蛋糕(中英食谱教程)


When I saw this Whipping Cream Pound Cake recipe at Fion's blog, I immediately bookmarked it. I had an opened pack of whipping cream, about a quarter left after making our family's favourite Homemade Matcha Ice-Cream. As whipping cream has to be used up within 3 days after opening, this recipe comes in really handy. I baked a blueberry pound cake using the left over whipping cream and really love the smooth and moist texture of the cake! After uploading this post, I will be off to the airport with my family for our vacation in Down Under, will be back blogging again in two weeks time! 

当我在Fion的部落格看到这鲜奶油磅蛋糕的食谱时,就马上记下来了。因为冰箱里还有剩下四份之一的动物鲜奶油等着我来消费。我用这食谱烤了蓝莓磅蛋糕,质感好滑顺,蛮喜欢的!上载这帖子后,我将与家人赶去机场搭飞机,开始我的度假旅程,两星期后再回来。

Quick and Easy Blueberry Yogurt Muffins 简易蓝莓优格马芬 (中英食谱教程)





Blueberries are in season and abundance this month. I used to pay $4.95 for a punnet of 125 grams. It has been on special promotion at supermarkets for the past weeks and cost about $2.50 per punnet. I bought 12 punnets at one go and half of it went into our stomachs (2 adults and 2 kids) in one day! You see, the blueberries we get here in Singapore are imported from the United States, thus they do not have a long shelf life and turn mouldy easily. So, we have to consume it as soon as possible.

This popular overnight, no-cook refrigerator oatmeal is a power pack nutrition and healthy breakfast which is really simple to make. It is made in individual glass bottles and serve cold. Well...you can actually use any container you can find at home, be it glass or plastic, best recycle!)

Blueberry Jam Wholesome Loaf (Breadmaker recipe)




My Kenwood breadmaker has been serving me well for the past half year and it is one of my best investment so far. Ever since I started using  it, I have stopped buying 'Gar....." or "Sun....." brands loaf bread off the shelf. I prefer homemade bread these days as it is healthier and without any preservatives. I am also happy that after I have introduced the breadmaker in my baking, more than a dozen of friends have bought the bread machine and started baking healthy bread at home.

It is almost two weeks since my built-in oven has broken down. The oven has been with me since I moved into my marital home fourteen years ago. It has been a white elephant in the kitchen for many many years until I picked up baking two years ago.
