Quick & Easy Moist Gluten-Free Brownies 简易湿润无麸质布朗尼 (中英加图食谱)



It's been a long time since I last shared a recipe here. These days I'm busier guiding my boy who is in the Gifted education programme (GEP) on top of doing my endless household chores. 

Well, this doesn't mean that I've stopped baking or sharing recipes. I'm still active in sharing recipes as well as my food adventures but over at Instagram (IG). So do click 'HERE' and follow me on Instagram if you would like to see more frequent and active updates from me. :) Now and then, I will share videos of my food preparations in IG stories which last for 24 hours after posting, you can also find the past IG videos at the highlights where my Instagram bio is.

Here's sharing a really simple brownie recipe which I've baked last Friday for my boy's 11th birthday. A gluten-free and fuss free recipe as no mixer is required at all!

Nutella Ogura Cake 巧克力榛子酱相思蛋糕 (中英加图对照食谱)



My first attempt of baking an ogura cake - Ogura Colour De Quad cake was few months back and I like the way it turned out with four different colours using all natural colourings like blue pea flower, beet root powder and matcha powder. This time I decided to try Nutella flavour as I was craving for a chocolate cake. It turned out to be soft, super moist and chocolatey. I am giving myself two thumbs up for this cake as it is super delicious and I highly recommend you to try it!

Camouflage Breadmaker Loaf 迷彩面包机吐司 (中英加图对照食谱)




Bake this soft and fluffy all natural camouflage loaf to cheer my little one up as he has been suffering from frequent nose bleeding due to block nose caused by the haze. Wishing the haze to go away soon as I miss the sun, blue sky and fresh air!!!

Watermelon Shaped Pastry Mooncake 西瓜造型月饼 (中英食谱教程)




Watermelon shaped bakes seems to be in the trend this year. You can find watermelon shaped bread, roll cakes and now mooncakes! This idea is from a bakery in Taiwan who hit the news recently with this creation. This is my first time using Ghee and I am surprise to find out that this cultured butter is full of health benefits. I love it as I am one who advocates using all natural, healthy and premium ingredients for baking!

Butter Cake (Famous Mrs NgSK) 奶油蛋糕 (中英食谱教程)

  


This famous 
Mrs NgSK butter cake recipe needs no introduction. It is so raved about in the bloggersphere and everyone who tried it deem it the best butter cake they have ever made. This recipe uses the egg separation method and yields a light, soft, moist and fragrant butter cake.

这著名的Mrs NgSK 奶油蛋糕不需要我太多的介绍,因为好多博友们试过了都赞不绝口, 也认为是做过最好吃的奶油蛋糕。 食谱的制做过程中使用了分蛋打发方式,做出来的奶油蛋糕
轻盈, 柔软, 湿润又香气十足。

I have used this Mastrad mini bundt mould (made of premium silicon, easy to hold safety handles, easy to demould and odourless) to make some small and dainty cakes in different flavours using natural ingredients like organic vanilla paste, uji matcha powder and cocoa powder. This is my trial bake here and I intend to make this again for my kids' teachers for the upcoming teacher's day.

Quick & Easy Double Chocolate Yogurt Muffins 简易双巧克力优格玛芬 (中英食谱教程)



I have been using this quick and easy muffin recipe all these while especially when I am super busy and do not have much time to bake. This recipe is really a life saver to me as all in all it takes only 30 minutes to churn out a batch of delicious and moist muffins. In this recipe, I only used one single baking tool - the Tovolo dough whisk, to do the job. Yay, less washing to do...especially if you are like me who do not have the luxury of having a helper at home to do all the washing. 

每当超忙碌时,这简易又快速的食谱是我的救星。因为在短短的三十分钟就能烘焙出又湿润又好吃的马芬。

For those who are new to the dough whisk, it is also known as the Danish Dough Whisk or Brotpisker in Danish. It is an essential tool for all bakers as it can do chores like mixing muffin batter, mixing heavy dough prior to kneading and other batters which you don't want to beat for fear of toughening your bakes. This specialized baking tool is also easier to wash compared to a hand whisk.

Zebra Yoga Cotton Cake 斑马瑜伽棉花蛋糕(中英食谱教程)



Last Friday, I posted my first attempt of the Yoga Cotton Cake, the response was so good and many people are interested to bake this soft, moist and flexible cake. In fact, I have received more than one thousand Facebook private messages and questions regarding this cake. It was certainly not easy going through every single messages and I must admit that I 'see till I blur blur'...haha! My apologies if I have missed out any of your questions and seek your understanding.

Homemade Leopard Print Tokyo Banana- 自制豹纹东京香蕉蛋糕(中英食谱)





The first time I heard of Tokyo Banana was before I went for my vacation in Osaka in 2013, my nephew Darren had asked me to buy it if I see it in Osaka. Unfortunately, I could not find it in Osaka, not even at the Kansai International Airport.

Tokyo Banana (東京ばな奈) is a Japanese souvenir sweet of Tokyo, a banana shaped sweet full of banana custard wrapped in a fluffy sponge. It is considered a top souvenir and must buy when one visits Tokyo. 


I happened to see a homemade version of the Tokyo banana at a chinese blog recently and decided to give it a try. Please pardon my not so nice drawing of the leopard print on my first attempt. Nonetheless, the taste is good and not too sweet like the original version. The kids love it and we finished the 9 pieces all in one go!

Racoon cut-out Cookies - Valentine's Special 浣熊造型饼干- 情人节特定 (中英食谱教程)




Two weeks ago, my blogger friend, Fion invited me to join in the fun of posting Valentine's cookie together with a few other bloggers on Valentine's Day. Here's sharing these Racoon cookies which I have baked specially for my dear hubby. The racoon holds a special meaning for me as the first gift I received from my other half during our first date was a stuff toy racoon. (you'll see it on the left in the photo below) Hope these racoon cookies will bring him fond memories of our courtship days.

Cookie Cutter Recipe 造型压模饼干(中英食谱教程)


Yesterday was the last day of school term for my little boy. When he came home, he was kind of sad as he would not be going back to the holding school where the Primary 1 and 2 students are attending this year due to the school construction of an indoor sports hall and classroom blocks at the main school campus. I know he would miss the Chess corner most as that's where he and his good friends would play chess (moving giant Chess pieces which are slightly shorter than the children but light weight) every morning before lessons starts.

Black Bottom Cupcakes 黑底杯子蛋糕 (中英食谱教程)




Two days ago was my son's 7th birthday. He had requested for an Oreo Cheesecake to celebrate with our church friends during our cell group meeting the night before his birthday. I did a 9 inch non-baked one as requested. As I was rushing for time, plus the fatigue in me had caused me to accidentally drop the whole cake before I could even take any photo of it!!! /OMG

Steam Moist Chocolate Cupcake 蒸湿润巧克力杯子蛋糕 (中英食谱教程)



I have been trying out my electric steam oven to steam cupcakes but have failed several times as the cupcakes simply did not rise and collapsed instead. Finally, after trying out this steam moist chocolate cake recipe which I found online last week, it worked on my Brandt steam oven, not only did it rise, it exploded somehow and had a cute mushroom head. :D I love its unique look, quite unusual from the neat looking cupcake.  The cupcakes are chocolatey rich, super moist and not too sweet. Great for chocolate lovers like me! :)

Quick & Easy 30 minutes Oreo Marshmallow Fudge Cake 简易三十分钟奥利奥棉花糖蛋糕 (中英食谱教程)



Yesterday was my darling daughter's 13th birthday. She has requested for a non-cream, simple chocolatey cake with Oreo cookies and marshmallow. I found one recipe on the web which fits her description but has modified greatly to come up with a healthier and low sugar version.  The result is a chocolatey, fudgy and not so sweet cake which I like. It is a quick and easy, fuss free cake with minimal washing as you only need a hand whisk and spatula to do the mixing. Here's the cake which I have assembled for her and glad she likes it.

After making a batch of healthy Snowskin mooncake (without shortening) last week,  I have set aside time to bake these chocolate mooncakes yesterday. I love especially the heart shape ones which says, "I love you" in mandarin. These of course are meant for my the other half. :)

Healthy All Natural Snow-skin Mooncake 健康全天然材料冰皮月饼 (中英食谱教程)




Made these healthy snow-skin mooncakes two days ago. The tri-colour skin was inspired by my Cute Caterpillar Cookies recipe. I have adapted this recipe from my Rainbow Snow-skin mooncakes which do not use any shortening at all. As one who advocates healthy eating, I avoid using unhealthy ingredients like shortening if possible. I have replaced the shortening with extra virgin olive oil and it did not compromise on the skin texture as it is still soft and chewy. 
For this recipe, I have used HK Black sesame paste from Kwong Cheong Thye. ($12 for a 1 kg pack). I love the great selection of mooncake paste there!

前两天做了这些健康的冰皮月饼。三色冰皮的灵感是来自我的可爱毛毛虫饼干食谱。这个配方是取自我的彩虹冰皮月饼,也是免用白油的。我觉得白油不健康,所以从来都不用它。在这个食谱,我用特级初榨橄榄油来取代,完全没影响冰皮嚼劲和柔软的质感。包裹的馅料是在广祥泰买的香港黑芝麻蓉。(一公斤包装 $12)。

I almost forgot that I have a copy of The William Sonoma baking book until I saw Zoe's post on the crisp chocolate bites. You see, the problem with me is I am attracted to recipe books since I started baking 3 years ago. I did a recent count and realised that my collection has almost hit 100! I have to refrain myself from buying any more as I haven't even finish a quarter of the collection and many are still new and shrinkwrapped!
