Low-Fat Almond Butter Cake 低脂杏仁奶油蛋糕 (中英加图对照食谱)



Finally, the kids are back to school today after a month of school holidays! I've not been blogging for the past weeks as the June school holidays have kept me really busy. With the kids around, I hardly have time for myself and also I'm involved in a new project and am so EXCITED about it! (it's a secret now but I'll tell you when the time is right, ok? ;p)  

已将近一个月没在这儿与大家分享了。六月的学校假期,孩子们没上学,全职妈妈的我特别忙碌,几乎每天都安排一些活动与孩子们互动,没什么个人时间。同时,也参与了一个新项目而感到非常兴奋! (暂时是个秘密,时机成熟会告诉大家的!)

Healthy Wholemeal Cranberry Almond Cookies 健康全麦蔓越梅杏仁酥 (中英加图对照食谱)




The Lunar/Chinese New Year (CNY) is less than a month away. Have you started making CNY goodies? Most traditional Lunar New Year goodies are packed with sugar and fat, with little nutritional value at all. Thus, I am determined to come up with a healthier cookie recipe this year. I have tweaked and modified greatly an almond cookies recipe found on 孟老师's cookie recipe book. 

农历新年快到了,您开始做年饼与零食了吗?多数传统的年饼与零食热量和脂肪含量高,几乎没什么营养价值可言。所以,我就把在孟老师手工饼干食谱书上,看到的杏仁酥食谱,大大地改良成健康,营养丰富的全麦蔓越莓杏仁酥。

 I have also received a box of Mastrad macaron kit to try out. 


Using this kit, I have made a batch of French method Macarons and I am so glad that it is successful on my first attempt! Though it is not very tall, it is close to the ideal macaron which should have a perfect circle with solid smooth bases, have a ruffled “skirt” or “feet” along the edges where it has risen in the oven, taste slightly chewy and yet crunchy!

Super Moist Almond Butter Cake 超湿润杏仁奶油蛋糕(中英食谱)


Do you love butter cakes? I don't quite always like it, but somehow I just can't resist this almond butter cake which is so fragrant and really moist in texture with the addition of almond meal. (finely grounded almond) It is so delicious that I went for a second and THIRD helping...rather unusual for one who is not a fan of butter cake! Do give this cake a try as it will not disappoint you and be sure to use premium butter for a superior taste! 

喜欢吃奶油蛋糕吗?老实说我并不太喜欢,但这次做的杏仁奶油蛋糕却令我无法抗拒!可能加了杏仁粉,烤出来不仅香,质感也很湿润。我吃了一片,忍不住又再拿了一片,一口气吃了三片蛋糕喔!这蛋糕食谱值得一试,决对不会让您失望的。还有记得一定要用优质的牛油,做出来的成品才会更美味哦!

French Almond Cake 法式杏仁蛋糕(中英食谱教程)(中英食谱教程)




Last Saturday, I baked this French Almond cake as a present for a good friend son's birthday. I have chosen this non-cream cake knowing that her 5 year-old does not fancy cakes with cream. I started with the intention to bake one 8 inch cake which this recipe calls for. It turned out to be quite a short cake as it didn't rise much during baking. Looking at the nicely baked but flat cake, I deem it not presentable to give away as gift. I quickly measured out the ingredients from the same recipe and baked it in a 6 inch round pan. The second bake gave a better height and together with the first bake, I turned it into a 2 tier cake which I am rather pleased with. 

上星期六,烤了这法国杏仁蛋糕给好朋友的5岁小儿子作为生日礼物。这小朋友不喜欢有奶油的蛋糕,所以我选择做了这款香香又弥漫着浓浓杏仁味的蛋糕送给他。原本打算照着食谱做一个8寸的蛋糕,但烤出来的蛋糕蛮矮的,觉得不体面。我赶快用同样的食谱烘了另一个蛋糕。第二次用的是6寸圆形烤模,烤出来的高度刚刚好。我把两个蛋糕叠起来后,还真满意呢!

Matcha Macarons with Dark Chocolate Ganache (Pierre Hermes Italian Method) Tutorial Recipe


It's been a long time, more than a year, since I last attempted to make macarons. The first time was a total failure, there were no feet at all and many shells were cracked. The second attempt which was my last attempt, turned out better than the first. Half of the shells showed feet but that's only halfway to a successful tray of macarons. I stopped trying after that as firstly, I am not a macaron fan, secondly, there are so many other recipes to try out in my long to-bake-and-try list. Lastly, I am not confident of getting those pretty feets out.

'Famous Amos' Almond and Chocolate Chip Cookie 杏仁巧克力饼干 (中英食谱教程)



The first day of the Lunar New Year will arrive in four days time. This year I have very little time to bake up a storm of chinese new year goodies like I did last year as my new dry kitchen has just completed renovation last week. I have wanted to make the all time favourite melt-in-the-mouth pineapple tarts but I do not have much time. I have chosen a simple cookie recipe to bake for my family. This cookie is a Famous Amos copycat.

Souffle style Chocolate Cupcake 软嫩可可小蛋糕 (中英食谱)



Last Thursday was my son's kindergarten class farewell party. Two days before the celebration, his form teacher said he had told her that mummy's oven has broken down and he didn't know what he would be bringing to school as mummy usually would bake something for any events or occasions. I assured his teacher that with no oven, I can still bake with my Airfryer. :)

Non-Bake White Chocolate Square Cookies 免烤白巧克力方块饼干(中英食谱)


 

Today is Children's Day and I made these easy non-bake cookies for my two darlings. It is a sweet treat from mummy here who saw this recipe from a book -孟老师的100多道手工饼干  which she got recently. It is an easy and no-fuss recipe using only three ingredients.
