Non-Bake Cendol Cheesecake 免烤煎蕊芝士蛋糕 (中英加图对照食谱)




My hubby is a great fan of Chendol. Thus I have experimented and created this non-bake Chendol cheesecake to celebrate our 16th wedding anniversary last Friday. Glad it is well received! 

孩子的爸好喜欢吃煎蕊(chendol),我就摸索自创了这免烤煎蕊芝士蛋糕来庆祝上星期五的16结婚周年!好喜欢这美味又简易的蛋糕,因为不需要用到烤箱或电动搅拌器喔!

Non-Bake Chendol Cheesecake 
免烤煎蕊芝士蛋糕


Ingredients 食材:(this makes a 6 inch heart-shaped or round cake, to make an 8 inch cake, just multiply the amount of each ingredient by 1.78 and round off the decimals 可做6寸心形或圆形蛋糕,如要做8寸的,请将食材的份量乘1.78)

Base 饼底 :
90g digestive biscuits (about 6 pieces) 消化饼 (大约六片)
30g unsalted butter, melted 无盐奶油,融化





Fillings 
蛋糕体:
120g coconut milk 椰奶
60g pure gula melaka 纯椰糖
250g cream cheese, soften at room temperature 奶油奶酪,室温软化
50g greek-style yogurt 希腊式优格
1 tbsp gelatine powder 明胶粉
60ml water 水
80g cendol 煎蕊 (can use store-bought or homemade ones* 可用买的或自制的*
60g sweet red beans 蜜红豆  (can use store bought or homemade ones** 可用买的或自制的**

The Gula Melaka from Ah Mok's shop in Malacca is really good and fragrant, highly recommended!
椰糖在马六甲Ah Mok的店铺买的,特别香,强力推荐!


Decorations 表面装饰:
some cendol 煎蕊适量
some sweet red beans 蜜红豆适量 
some syrup attap/palm seeds 糖浆棕榈种子适量


Note:  Different brand of ingredients have different composites, thus there may be a slight difference in the end result. 
注: 不同品牌的材料有不同的复合材料,所以最终成品有可能稍有不同。





Preparations 准备:


1. Melt the butter. Crushed or pulverize biscuits into fine crumbs.  
1. 融化奶油。饼干压碎或搅碎。




2. Melt the gula melaka in coconut milk over low heat until it dissolves. Set aside to cool.
2. 椰糖加入椰奶,用小火煮至椰糖溶化。放凉备用。




3. In a bowl, sprinkle gelatin powder (without stirring) into water, put aside for 10 minutes for grains to bloom before setting the bowl over a pot of simmering hot water. Stir with a spoon until gelatin melts, remove and put aside to cool to room temperature.

3. 把水放在一个碗中,撒上明胶粉(不要搅拌),静置10分钟,隔水加温,搅拌到胶粉溶化,放在一边冷却,备用。



Method 做法:

Crust 饼干底: 
1. Add the crushed biscuits and melted butter in a mixing bowl, mix well together. 
1. 压碎的饼与融化的牛油放入碗中,混合均匀。



2. Press the biscuit crumbs firmly onto the base of a pan with removable base. 
2. 饼干碎均匀压在活底模底,用力压紧。



3. Poke some holes with a fork. (this will prevent the chilled fillings separating from the base.) 
3. 用叉子戳一些洞。(这可避免蛋糕体凝固后与饼底分离。)



4. Cover with cling wrap and chill in the freezer compartment for half an hour. 
4. 用保鲜纸包住放入冰箱冷冻30分钟至冰硬。





Filling蛋糕体:

1. Use a hand whisk to mix the softened cream cheese and yogurt together until smooth. 
1. 用手搅拌器把奶油奶酪和优格搅拌至滑顺。




2. Mix in the gula melaka mixture before mixing in the gelatin solution. 
2. 拌入椰糖糊再拌入明胶液。




3. Add in the cendol and sweet red beans, mix well. 
3. 加入煎蕊和蜜红豆。搅拌均匀。




4. Pour the mixture into the chilled crust. Smooth the surface with the spatula and tap the pan lightly on the table top.
4. 面糊倒入冷冻的饼底。用刮刀抹平表面后,轻轻在桌台上敲几下。





5. Refrigerate for about 4 hours to set the cake .
5. 放入冰箱冷藏至少4个小时使蛋糕凝固。








6. Decorate the surface with cendol, sweet red beans and syrup palm seeds. 

6. 蛋糕表面用煎蕊,蜜红豆和糖浆棕榈种子随意装饰。

can i replace coconut milk with fresh milk?

No, you can't, if you replace with fresh milk, you would change the taste totally!

Where to buy the sweet red beans?

Hi Chew LI, you can find canned sweetened red beans at Japanese supermarkets like Meidi-ya or Isetan, or at major supermarkets Japanese food section like Cold Storage, NTUC finest, etc.

Does still hv the cheese taste with the coconut and gula melaka added in? TIA

Hi Vivian, the cheese taste is rather subtle but it also depends on the brand that you use. Taste is very subjective, to one it may taste cheesy but not to the other. So far many who have tried this recipe gives very good feedback! :)
