Matcha Crepes

It's the June school holiday, with the kids around at home, I am busier and I definitely missed my quiet mornings, haha!
Saw the crepe recipe at Sonia's blog last week and thought I could make this for my kids breakfast during the school holidays since they need not rush to school and can sit down to enjoy a good breakfast. I immediately bookmarked it and did a fusion version for this morning's breakfast! My family loves Matcha (also known as green tea powder) and we just cannot get enough of it! I had wanted to use azuki (red bean) paste to go with the crepes, but the forgetful me has forgotten to replenish it in my pantry. I saw a bottle of unopened Nonya Kaya jam and two packs of Blueberries in the fridge and decided to pair it together with the matcha crepes. The Nonya kaya blends perfectly with the Matcha crepes and we had an enjoyable breakfast!

Matcha Crepes
(recipe adapted and modified from Nasi Lemak Lover

Ingredients:
3 eggs
200ml milk
15g sugar
A pinch of salt
75g plain flour
7g matcha powder

Method 方法:
1. In a mixing bowl, whisk all the ingredients together. Strain it through a fine sieve to ensure no lumps in the batter.

2. Heat a lightly oiled non-stick frying pan over low heat. Use a ladle to scoop the batter onto the pan, tilt the pan with a circular motion so that the batter coats the surface evenly.

3. Cook the crepe until the sides curl up a littleuse a spatula to flip to the other side and cook till golden brown.

Notes: I serve the crepes with Nonya kaya jam and blueberries and my kids love it! You can serve it with a scoop of ice-cream or any of your favourite sauce.

Hi Cheryl,

Agreed that mums are always busier during school holidays... Ours is coming in the first 2 weeks in July. Fortunately, we have school holidays program here but can be quite costly to put the kids in these programs.

When I saw you making matcha crepes, I laughed... knowing that you really like green tea :p

Hi Zoe, I have to plan the kids program so that they won't get too bored. Brought them out for plays, movies, museums, etc. I have less time to bake this month or rather too tired to bake after our outings.
Haha...yes, I am one great fan of Matcha! ;p

Hi Cheryl,

May I ask this crepe is crispy? And the batter can keep in fridge for how many day? After cook can keep in fridge for how many day?

Baking Taitai said...

Hi Abi, crepe is not crispy. 1 to 2 days in fridge should be fine, discard if got foul smell.
