Quick & Easy Cheesy Ham Onion Muffins 简易芝士火腿洋葱马芬 (中英食谱教程)

Who says muffin has to be sweet? These Cheesy Ham Onion savoury muffins are damn delicious served straight out of the oven!

Quick & Easy Cheesy Ham Onion Muffins 
简易芝士火腿洋葱马芬
(食谱大大改之孟老师的100道小蛋糕,English recipe translated by Baking Taitai)

Ingredients:(makes 6)
80g leg ham, diced 
45g onions or shallot, diced (shallot will be more fragrant)
50g cheddar cheese, shredded
1 egg (I used 65g) 
10g caster sugar
55g vegetable oil (I used sunflower oil)
50g fresh milk
90g cake flour (I used premium Blue Jacket cake flour
1/2tsp baking powder
1/8tsp baking soda


Note: Different brand of ingredients have different composites, thus there may be a slight difference in the end result.




食材:(可做6个)
80克 火腿,切丁
45克 洋葱或小葱头,切丁 (用小葱头更香)
50克 切达乳酪,切丝
1个 鸡蛋(我用65克)
10克 砂糖
55克 植物油(我用葵花籽油)
50克 鲜奶
90克 低筋面粉用优质水手牌蛋糕粉
1/2 小勺 发粉/泡打粉
1/8小勺 小苏打粉

注:不同品牌的材料有不同的复合材料,所以最终成品有可能稍有不同。





Method 做法:
1. Put the chopped onion into a wok and fry over low heat till soft, then add in the ham and fry till fragrant. Set aside to cool. 
1。火腿,洋葱切碎后,先放入洋葱丁在热锅中用小火炒软,再放入火腿炒香, 放凉备用。 





2. Use a hand whisk to beat the egg and sugar until well combined.
2。全蛋加细砂糖用打蛋器搅拌均匀。




3. Add in oil and milk, continue to whisk until well mixed. 
3。加入油和牛奶,继续搅打呈均匀的液体状。 




4. Sift the flour, baking powder and baking soda together. Add into the mixture in step 3, use a silicon spatula to fold the flour mixture in.  

4。低筋面粉,泡打粉和小苏打粉一起过筛,再加入做法3中,改用硅胶刮刀以不归则方向搅打呈均匀的面糊。







5. Add in shredded cheddar cheese as well as the fried ham and onion. Use the silicon spatula and gently mix well.  5。加入切达乳酪丝,还有炒好的火腿和洋葱,硅胶刮刀轻轻地拌匀。




6. Scoop the batter into the muffin cups about 3/4 full. 

6。用汤匙将面糊舀入纸模内约七分满。




7. Bake in a preheated oven at 180 degrees Celsius, top/bottom heat, for about 25~30 minutes. ( The cooking temperature as suggested in all my recipes serve as a guideline. Every oven has different thermostat, you may have to adjust the temperature and timing to suit your oven.)

7。放入已预热的烤箱以180摄氏度,上下火烘烤25~30分钟左右。( 食谱里的烘烤温度和时间只是供参考,每一架烤炉的恒温器都不同,请自己调适。)

Hi Jess, you can omit the onions totally. If you like, you can increase the amount of ham or even add in bacon. :)

Hi dorealmoo, I would not suggest using mozerella cheese as it differs in taste and texture from cheddar cheese which is a hard cheese with little moisture and crumbly texture. Mozerella has higher moisture content and will spread and stretched in high heat and more suitable for use in pizzas.

Hi Cheryl, I've tried this muffin and my family it! But I find like not salty enough so what can I add? I'm using chicken ham, will this effect the saltiness? Hope to receive your reply asap. Thanks

Hi Christine, I usually store my unconsumed muffins in the fridge and warm it up the next day before eating especially the savoury ones as it is nicer to eat it hot or warm.

I just tried this recipe and it tasted great! However the texture is hard. May I know if ur version is fluffy soft? I am wondering if I over baked or over mixed it.

Hi dorealmoo, my muffins are soft. I think you may have probably over mixed it causing gluten to form and got a hard texture. Over baking is another possibility.
