Matcha Nama Chocolate 抹茶生巧克力 (中英食谱教程)


It was almost 2 years ago that I made the Royce copycat Nama Chocolate. Yesterday, I attempted to make another Royce's copycat - Matcha Nama Chocolate which has the aroma and bitterness of green tea. If you ask me which one taste better, it would be difficult to make a choice as both are equally good! This quick and simple recipe is definitely worth trying!   


Matcha Nama Chocolate 
抹茶生巧克力
(english recipe adapted & modified from Justonecookbook,  中文食谱由Baking Taitai翻译)



Ingredients:(makes 36 pieces, using 8"x 8" square pan)

400g white chocolate* (I used Lindt White Chocolate Swiss Classic Bars. Check that the white chocolate contains cocoa butter, do not use inferior brands which contain vegetable fat. )   )

125ml heavy whipping cream (fat content at least 38%)
25g unsalted butter  (cut into small pieces)
20g pure green tea powder (matcha) + 1 tbsp or more for sprinkling





食材:

400克 白巧克力*(我用Lindt Classic白巧克力, 白巧克力要含有可可脂的,别用含植物脂肪的低等品牌白巧克力。 )
125毫升 淡奶油(脂肪含量至少38%)
25克 无盐牛油(切小块)
20克 纯绿茶粉(抹茶)+ 1汤匙或多 (撒在表面上)







Methods 做法:
1. Chop the chocolate into smaller pieces using a knife so that they will melt faster and more evenly. (Due to the warm weather, my chocolate was in a soft state so I just cut into pieces) 

1。把白巧克力切碎,尽量切细点,才会融化的快与均匀。(由于天气太热,我的巧克力放在室温很快就软化了,所以我只切片。)






2. Put cream in a saucepan (make sure the pot is perfectly dry as even a small amount of water can "seize" the chocolate during melting ) and heat till you see bubbles forming at the side. Turn off the heat. (Do not overheat the cream or your chocolate will separate. )

2。把鲜奶油放入一个锅中加热,(一定要确保锅是完全干的,因为即使少量的水也可以使巧克力变成固体颗粒状态)看到周围冒泡时,息火。 (不要煮过热,不然巧克力会油水分离。)




3. Add in the white chocolate and stir quickly till it melts then add in the butter and stir till mixture is completely combined and smooth. (I did this over the induction hob using super low heat to keep the mixture warm for easier mixing) 

3。加入白巧克力,快速搅拌融化再加入牛油, 拌均滑顺。(我用电磁炉最小火保持混合物的温度会比较容易搅拌。)



4. Sift in the green tea powder (matcha). Mix well together. 

4。筛入绿茶粉(抹茶),拌匀。





5. Pour the mixture into the 8"x 8" pan laid with non-stick baking paper. Tap the pan a few times on the kitchen countertop to remove any air bubbles. Smooth the surface and refrigerate for 4-5 hours or overnight.

5。将混合物倒入铺有不沾烘焙纸的8"x 8"烤盘中。烤盘在桌面震几下消除气泡,表面抹平再放进冰箱冷冻四个小时以上或隔夜。





6. Remove the chocolate from the baking pan. Slice the chocolate block into 4 blocks and then cut each block into 9 small pieces with a warm knife. Make sure to warm the knife after each cutting. You can use hot running water but wipe dry completely before each cut.

6。巧克力取出烤盘。用热刀把巧克力块先切成4块,每一块再切成9小片。每切一次就要热刀,可用热水来热刀,但每次必须完全擦干。




7. Dust 1 tablespoon of green tea powder (matcha) on top of the chocolate. Store the chocolate in the refrigerator until serving. Serve chilled. You can keep in the refrigerator for up to 5 days.

7。在凝固巧克力的表面筛入绿茶粉,然后放入冰箱冷藏即可。一般可以保存5天左右。

Love the pairing of white chocolate and matcha! And of course how simple it is to make these melt in the mouth goodie!!

Cheryl, I've tried the dark chocolate ones and love it so much. I want to try this green flavour as well. I'm sure this good too.
