Purple sweet potato egg white butter cookies 紫薯蛋白奶油饼干 (中英加图对照食谱)


Using the purple sweet potato powder I made 2 weeks ago, I have baked these butter cookies and am happy that it turned out a beautiful purplish pink which is acheived by using all natural colouring and nothing artificial at all! These cookies used egg white only so if you have leftover egg whites from previous bakes, this will be a good recipe to consume it. :) 

自制的紫薯粉做了这些蛋白奶油饼干,很满意用天然材料烘出来的紫红色,也刚好可以消耗在冰箱剩余的蛋白。;) 


Purple sweet potato egg white butter cookies 
紫薯蛋白奶油饼干




Ingredients: (makes about 12 pieces)

115g unsalted butter, room temperature
50g icing sugar
30g egg white
110g cake flour (I used Blue Jacket premium cake flour
50g homemade purple sweet potato powder *(click here for recipe) 

*If you are using store bought purple sweet potato purple, you may not need to use so much as the colour will be darker compared to homemade ones. Please adjust accordingly. 




材料: (可做 大约12个)
115克 奶油,室温
50克 糖粉
30克 蛋白
110克 低筋面粉 我用水手牌优质蛋糕粉
50克 自制紫薯粉*点击’看自制紫薯粉的食谱与做法) 

*如果是用购买的紫薯粉,份量不必那么多因为颜色会比较深,请相应调整。 


Method 方法:

1. Mix the flour and purple sweet potato powder well together. Set aside. 
1。面粉与紫薯粉混合均匀, 备用。 




2. Use a hand whisk to cream the butter and sugar together. 
2。用打蛋器搅拌奶油和糖粉直到混合均匀。 




3. Add the egg white in gradually and mix well together. Use a silicon spatula to fold in the flour mixture till well combined. 
3。慢慢加入蛋白搅拌均匀。再加入混合粉用硅胶刮刀以切拌方式拌匀。





4.  Transfer to a piping bag. 
4。饼干面团放入挤花袋。




5.  Pipe the cookie dough onto a baking tray laid with non-stick baking paper or baking mat. (I used Wilton 1M tip)
5。挤花在铺有不沾烤纸或烤殿的烤盘上。(我用Wilton挤花嘴1M) 





6. Bake in a preheated oven at 150 degree Celcius top/bottom heat fan forced for 12~15 minutes.  
6。放入预热烤箱以150摄氏度上下火风扇烤12~15分钟。






7. Remove from oven and transfer to a cooling rack, store in an air-tight glass container after it has cooled down completely. 
7。烤箱取出,转移放在凉网上,完全散热再储存在密封玻璃瓶。

请问我没有紫薯粉可以用其他(绿茶粉/可可粉)代替吗?分量是不是也一样?

Hi Christine, if you are residing in Singapore, you can buy purple sweet potato powder at Kitchen Capers. To do it yourself, scroll up to "Ingredients", the line where homemade sweet potato powder is found, if you look carefully, there is a bracket besides it which says " Click here for recipe', it will lead you to my step-by-step recipe post on how to make your own purple sweet potato powder.

Hi Cheryl, to use the homemade sweet potatoes powder in bakes, do we replace the sweet potatoes powder with the same amount of flour required in the recipe? Thanks in advance...

Hi misery frizzy, as you have to use quite a substantial amount of homemade purple sweet potato powder in order achieve a more vibrant colour, you can't replace with the same amount of flour, you will have to adjust accordingly depending on your bake.
