Yesterday was the last day of school term for my little boy. When he came home, he was kind of sad as he would not be going back to the holding school where the Primary 1 and 2 students are attending this year due to the school construction of an indoor sports hall and classroom blocks at the main school campus. I know he would miss the Chess corner most as that's where he and his good friends would play chess (moving giant Chess pieces which are slightly shorter than the children but light weight) every morning before lessons starts.
I suggested baking some cookies together and that cheered him up. He was excited to use the Tovolo Numbers Fun cookie cutters which I have received recently. He enjoyed cutting out the shapes and using the template to press on the dough. We had a fun time baking and bonding together. Best, we love the cookies that we have baked using this recipe from a famous Japanese baker!

Easy Cookie Cutter Recipe
简易造型压模饼干

Ingredients: (makes about 12 pieces of round cookies of 8cm diameter)
Plain Cookie:
60g unsalted butter

50g icing sugar (I reduced to 40g)
Pinch of salt
25g egg or whipping cream *
125g cake flour (I increased to 140g)
Chocolate cookie:
60g unsalted butter
50g icing sugar

125g cake flour (I increased to 130g)
10g unsweetened cocoa powder
* I used one 60g egg, divided into half, one portion for making the plain cookie and the other portion for making the chocolate cookie.

食材:(做12片直径8cm的圆形饼干)
原味面团材料:
60克 无盐奶油
50克 糖粉 (我用40克)
少许 盐
25克 蛋液或鲜奶油 *
125克 低筋面粉 (我用140克)
巧克力面团材料:
60克 无盐奶油

10克 无糖可可粉
*我用1粒60克鸡蛋,打散分成两份,一半做原味,另一半做巧克力口味的。
Advance preparation work 事前准备工作:
1. Bring the butter and egg to room temperature. (Do not over softened butter. Gently press the top of butter with your finger, if an indentation remains but still hold the shape then it is perfectly softened. Beat the egg before weighing. )

2. For plain cookies, just sift the cake flour. For chocolate cookies, mix the cake flour with cocoa powder before sifting.
2。原味饼干只将低筋面粉过筛。巧克力饼干则是把低筋面粉和可可粉混合后再过筛。
Methods 方法:
1. In a large bowl. use a hand whisk to beat the butter till creamy before adding in the icing sugar. Beat till well combined before adding salt.
1。用打蛋器快速搅拌盆中奶油至粘稠乳霜状后加入糖粉,均匀混合后再加入盐。
2. Add the egg or whipping cream in a few additions and beat till well combined.
2。分次倒入蛋液或鲜奶油并混合均匀。
3. Add in the cake flour or cake flour and cocoa powder mixture. Use a spatula to mix the flour in. Rotate the mixing bowl slowly as you mix into a cookie dough, press outwards.

4. Put the cookie dough into a plastic bag, use a rolling pin to roll it flat into a sheet of 18cm x 15cm x 0.7cm. Refrigerate for at least an hour.

5. Cut open the plastic bag with a pair of scissors. Sprinkle/dip the cookie cutter with some flour before cutting out shapes. Gather the remaining dough, roll flat and cut out more shapes. Place the cookies neatly on a baking pan laid with baking paper.

6. Bake in a preheated oven at 150 degrees Celcius, top and bottom heat fan forced, for 10 to 12 minutes. (For my Brandt oven, I used the traditional pulse function and baked for 12 minutes.)

7. Remove from oven. Allow cookies to cool on the baking tray for about 5 minutes (to prevent breakage) before you transfer to a wire rack to cool down further.
