Oreo Cheese Cupcakes Video Tutorial 奥利奥芝士杯子蛋糕 (中英食谱视频教程 )

If you have read my last post on the Black Bottom Cupcakes, you would have known that I felt really sorry for dropping the birthday cake that I have made for my son's 7th birthday last Sunday. To make up for this, I have baked a batch of Oreo cheese cupcakes for him and try to fulfil what he had requested earlier on - an Oreo Cream Cheese cake. Together with my girl, we have decorated it and transformed it into cute animals as she wanted to surprise her little brother. Some looked like mice, some looked like doggies, what do you think? :D

My boy is certainly pleased with this surprise!

Check out this video tutorial to learn how to make these oreo cheese cupcakes and transformed it into cute animals.

Oreo Cheese Cupcakes
(recipe adapted and modified from HHB

Ingredients: (makes 10)
15 Oreo cookies (10 left whole, 5 with cream removed and coarsely chopped)
230g cream cheese, softened at room temperature
50g icing sugar
1/2 teaspoon vanilla extract
1 large egg, lightly beaten, room temperature
60g Greek style yogurt (can be replaced with plain yogurt or sour cream )

Method 做法:
1. Preheat oven to 135 degree Celsius. (For my brandt oven, I have selected the traditional function.)

2. Place one whole cookie in each of the 10 muffin cupcake moulds.

3. Beat cream cheese with an electric mixer at medium high speed until smooth.

4. Add in sugar, beat until just combined.

5. Add in vanilla extract, beat until just combined.

6. Gradually drizzle in the egg, beat till combined.

7. Add in the yogurt and beat till just combined. Scrap the sides of bowl when necessary.

8. Lastly, add in chopped oreo cookies, fold in with a spatula.

9. Fill each cupcake mould to 9/10 full. (I have used the Tovolo cupcake scoop to dispense the batter into the cupcake mould as seen in the video tutorial. The silicon plunger keeps my finger clean and dispense the same amount every time. )

10. Bake for about 22~25 minutes until the filling is set.

11. Remove from oven and transfer to a wire rack, leave to cool completely.

12. Store in an airtight container, refrigerate for at least 4 hours or overnight before serving.

What do you think they look like?

Yummy! Yummy! 好吃极了!
