Steam Moist Chocolate Cupcake 蒸湿润巧克力杯子蛋糕 (中英食谱教程)

I have been trying out my electric steam oven to steam cupcakes but have failed several times as the cupcakes simply did not rise and collapsed instead. Finally, after trying out this steam moist chocolate cake recipe which I found online last week, it worked on my Brandt steam oven, not only did it rise, it exploded somehow and had a cute mushroom head. :D I love its unique look, quite unusual from the neat looking cupcake.  The cupcakes are chocolatey rich, super moist and not too sweet. Great for chocolate lovers like me! :)

Here's the recipe to share with you and since a large amount of cocoa powder is used, a good quality cocoa powder is highly recommended.

Steam Moist Chocolate Cupcake
(Recipe adapted and modified from My Kitchen Snippets)

150g cake flour
75g cocoa powder (I used Barry Cacao unsweetened cocoa powder)
3/4 tsp baking powder
3/4 tsp baking soda
1/4 tsp salt
3/4 tsp pure vanilla extract
2 eggs
100g brown sugar
150g corn oil (can be replaced by other cooking oil)
200g condensed milk

Methods 方法:
1. Sieve flour, cocoa powder, salt, baking powder and baking soda. Set it aside.

2. Use an electric mixer to beat eggs, sugar and condensed milk over high speed. Beat for 5 minutes or until light in colour. Slow down the mixer and add in the oil. Mix well.

3. Add in the flour mixture and mix until combined.

4. Pour batter into the cupcake moulds, cover the top loosely with aluminium foil and steam it for 30 minutes. Insert a toothpick in the centre of the cupcake and it should come out clean, if not steam for another 5-10 minutes or until fully cooked. (For my Brandt steam oven, I did not cover the top with aluminium foil, the cupcakes were steamed for 45 minutes.)

5. Remove from the steamer and cool on a wiring rack. Enjoy!

These cupcakes are so chocolatey and moist! Yum!

Hi 佳玲,这是蒸蛋糕的食谱, 不是烘烤也不是水浴法。您搞错了,所以会失败!

Hi June, I have not tried the bake method for this recipe thus can't advise you. However, you can always experiment and see if it works. ;)
