Healthy Purple Sweet Potato Snow-skin Mooncake 健康紫薯冰皮月饼 (中英食谱教程)

In my earlier post, I shared my homemade purple sweet potato powder and I have used it to make this healthy snow-skin mooncake skin which uses olive oil instead of shortening. I have used quite a bit of this all natural food powder to achieve a vibrant purple and I am beyond happy with the result...of course as purple is my favorite color! :)

Healthy Purple Sweet Potato Snow-skin Mooncake 
健康紫薯冰皮月饼 
(adapted from my Healthy all natural snowskin mooncake recipe)



Ingredients: (makes 19 pieces of 50g mooncakes )

A) Snow-skin 
150g fried glutinous rice flour (I used Redman's Kou Fien, to make your own, please refer to notes below.) 
180g icing sugar 
40g extra virgin olive oil *
200ml water 
3 tablespoons (45g) homemade purple sweet potato powder (click here for recipe) 

* For your knowledge - Extra virgin olive oil is the healthiest oil as it is the only cooking oil that is made without the use of chemicals and industrial refining. It is made simply by crushing olives and extracting the juice. Since extra virgin olive oil is simply fruit juice without any additives, its quality and taste are influenced by the varieties of olives, the terroir where they were grown. 


B) Fillings
480g lotus paste (I used honey purple sweet potato lotus paste from Kwong Cheong Thye)
80g melon seeds/crushed nuts (I ommited it this round)  





材料: (可做 19个 50克的冰皮月饼)

A) 冰皮: 

150克  炒熟的糯米粉 (我用红人牌‘糕粉’, 如果买不到可以自制,请看下面的笔记。)
180克 糖霜粉
40克 特级初榨橄榄油 *
200毫升 水
3大匙 (45克)自制紫薯粉点击’看自制紫薯粉的食谱与做法) 

*小知识- 特级初榨橄榄油是用橄榄鲜果在二十四个小时内压榨出来的纯天然果汁经油水分离制成的,其压榨方法采用纯物理低温压榨方法,没有任何防腐剂和添加剂成份,所以是最健康的食油。

B) 馅料: 
480克 莲蓉(我用在广祥泰买的蜂蜜紫薯莲蓉) 
80克 瓜子仁/果仁 (这次我没放)



Method 方法:

1. Mix the lotus paste and melon seeds/chopped nuts together and divide into 19 portions. Roll it round and set aside. (I didn't add any seeds/chopped nuts this round)
1。将莲蓉和瓜子仁/碎坚果一起混合,平均分成19份。搓圆,备用。(这次我没加瓜子仁或碎坚果




2. Mix the fried glutinous rice flour, icing sugar and purple sweet potato powder together.
2。将炒熟的糯米粉 (糕粉), 糖霜粉和紫薯粉一起搅拌。





3. Add in the olive oil followed by water gradually, mixing at the same time until a dough is formed. (DO NOT pour the water in all at once or you will end up with a sticky dough which is unmanageable.) 
3。入橄榄油再慢慢加水,一面加入,一面搅拌成面团。(不可一次倒入水,会导致面团十分粘而难已操作。




4. Wear vinyl glove (powder free & food service grade NOT surgical gloves!) and massage dough to soften it.

4。戴上乙烯基手套(无粉,适合食品用的)按摩面团至柔软。




5. Divide the dough into 19 portions (about 30g each).
5。将面团分成19份(一份大概30克)






6.  Use a rolling pin to flatten and wrap in the fillings. Roll into balls and sprinkle with some flour. 
6。每种颜色面团各取一份,组成一团,擀平。裹入馅料。搓圆,撒上一些粉。  





7. Put into the mould and press it firm. 
7。放入月饼模内,压紧。





8. Press out and place into trays. Keep in the fridge and consume within 2~3 days. (as preservatives, chemical and shortening is not used, the skin will become harder if you keep too long, best to consume asap.) 
8。按出后,放入盒子里,保存于冰箱内。2~3天内享用完。(因为没有放防腐剂,化学或白油,最好尽快享用完,不然冰皮会开始变硬。)






Notes 笔记:
- You can make your own fried glutinous by frying it in a cooking pan, stir it continuously (about 8 to 10 minutes) on low heat until you see some smoke coming up and the flour turns slightly yellow. Off the heat, remove from pan and set aside to cool down before using.  Unused portion if kept properly can be stored in the fridge for up to six months.
- 自制熟糯米粉:将糯米粉放入一个干净,无油无水的锅中,用小火,干炒至稍微冒烟即微微发黄,(大概8~10分钟),熄火。待凉备用。 用剩余的熟糯米粉如果保存妥当可以在冰箱收藏达六个月。

can reduce icing sugar? If yes can reduce by how much?

I don't suggest that you reduce the icing sugar, the snow skin is actually not that sweet. It is the fillings that you wrapped in that is usually sweet, you can buy low-sugar lotus paste instead.

Can make own purple sweet potato paste filling and use ur snowskin recipe to make snowskin mooncake? Wonder if is a good combination! Would love to try making purple sweet potato powder!
