Melt-In-Mouth Oreo Chocolate Chip German Cookies​ ​ 入口即化奥利奥巧克力豆德国酥饼 (中英食谱教程)

How's your Lunar New Year so far?  I have a great time spent with family visiting relatives and close friends during the first 4 days of Chinese New Year (CNY). We had a long weekend to celebrate this year as the first and second day of the Lunar New Year fell on Thursday (19 Feb) and Friday (20 Feb). It was great catching up with one another over sumptuous meals and CNY goodies. 

The CNY lasts for 15 days and we've got another week before it ends but my homebaked goodies are already running low in stock. (Click here to check out my CNY recipes) Today, I created another flavour of the melt-in-the-mouth German cookies since my family just can't get enough of it. Here's sharing another great flavour which you MUST try, I guarantee you will love it just as much as my other sweet and savoury ones!  






Melt-In-Mouth Oreo Chocolate Chip German Cookies​ ​
入口即化奥利奥巧克力豆德国酥饼 


​Ingredients: ​(makes about 50 pieces) 

125g  premium unsalted butter, softened at room temperature
​40g ​   icing ​sugar, sifted 

125g  potato ​starch
​80g    cake flour (I used Blue Jacket unbleached cake flour from Taiwan*)

2tsp   Oreo powder (process 3 pieces Oreo cookies without cream finely)
40g   Hershey's mini chocolate chips




食材: (做大约50粒)

​125克 ​  无盐奶油, 室温软化
​40克 ​    糖粉,过筛

​125克 ​  太白粉 (也称为马铃薯粉或生粉)
80克     低筋面粉​ ​我用台湾水手牌蛋糕粉*
2小茶匙  奥利奥粉 (3片奥利奥饼干无奶霜,搅成粉状)
40克         Hershey's 迷你巧克力豆

*'水手牌麵粉 The 'Blue Jacket flour' is made from top milling grades of hard red spring wheat (CWRS) from Canada and its water absorption rate and stability are superior than many other brands on the market.  It is positioned as the flour with the same quality like the Japanese premium brands yet at a more competitive price. It is now available in Singapore. *台湾水手牌面粉现在在新加坡也买的到了。

Method:

​1. In a mixing bowl, use an electric mixer to beat ​the ​butter​ and icing sugar till ​light and ​fluffy.
1。在一个钢盆,加入无盐奶油和糖粉,用搅拌机搅打至蓬松。




2. Sift in potato starch​ and cake flour​. With a spatula, mix the flour into the butter mixture well.
2。筛入马铃薯粉和低筋面粉。用橡皮刮刀拌均匀。




3. Add in mini chocolate chips and oreo powder, mix well and form a soft dough. Leave the dough to chill in the fridge for about 10 minutes if you find the dough too soft to handle. (I find it alright to handle and skip the chilling part.)
3。加入迷你巧克力豆与奥利奥粉,拌均匀成面团。如果觉得面团太软难处理,可先把面团放入冰箱,冷藏10分钟。(我觉得还好,不需要冷藏。)



4. ​​Roll the dough to form a small ball of about 8 grams each. Place on a baking tray line with baking paper, use a fork to press lightly down and dip the fork in water after a few press to prevent the cookie dough from sticking to the fork.
4。面团取约8克,用手搓成圆球状。放在铺有烤纸的烤盘上, 用叉子轻轻稍微压扁。每压几次,把叉子浸入水中,以防止面团粘到叉。


5. Bake in preheated oven at 150‘C top and bottom heat fan forced for 15 minutes. (timing as per my oven)
5。烤箱预热后,以上下火风扇150摄氏度烘烤约15分钟。(烘烤时间根据我家烤炉)


6. Remove from oven. Allow cookies to cool on the baking tray for about 5 minutes to prevent breakage before you transfer to a wiring rack to cool down further.
6。从烤箱取出,饼干在烤盘冷却5分钟后再转移到凉网,以防破裂。


Tips 提示:
1. You do not have to bake the cookies till it turns brown.
1。饼干不必烘烤到金黄色。

2. German Cookies is a type of butter cookie, thus it is best to use premium and good quality butter like Echire, Lurpak, President etc., as it will make a difference of how your cookies turn out.
2。德国酥饼是一种奶油饼干,所以一定要用品质好的奶油如 Echire , Lurpak, President 等等,做出来的饼干才会又香又好吃。

3. Soften butter should yield slightly to gentle pressure. Too soft butter will not cream properly with sugar and it will also affect your baked product.
3。奶油放在室温软化。手指按下感觉稍微软就可以使用了。不要等到奶油完全软化才用,不然会比较难打发,也会影响烘焙出来的成品。

 The cooking temperature as suggested in all my recipes serve as a guideline. Every oven has different thermostat, you may have to adjust the temperature and timing to suit your oven. Hi Mummy Yap, you can't use self-raising flour as it contains baking powder.

Hi, is the potato starch can be replace by corn flour? It is the same?

Hi Janness, for this recipe, potato starch is the main ingredient and it cannot be replaced by corn flour. Some of my readers tried with corn flour and feedback to me that it does not work.

Thanks for sharing Cheryl. They were indeed melt in the mouth and my kids love it :)
One question though, is it possible to omit the chocolate chips with the portion of the other ingredients unchanged, since I do not like the taste of Hershey's? Or perhaps what other brands would you recommend as an alternative to Hershey's? Many thanks:) !!

Hi Gracia, sure you can omit the Hershey's chocolate chips without having to change the portion of other ingredients. Besides Hershey's I also used Nestle and Ghirardelli brands. :)
