Milo Ice-Cream (eggless version) 美禄巧克力冰淇淋- 无蛋版(中英加图对照食谱)



Hope you have enjoyed my creation of the Milo Ferrero Rocher Swiss Roll in my last post. This time I am gonna share another personal creation which also got the big thumbs up from my family. This Milo frozen treat can be made with or without an ice-cream maker and definitely cheers us up in this time of hazy condition in Singapore caused by the Indonesia fires.

Due to the deterioration of air quality, my family has been keeping all doors and windows shut (hubby even bought air-tight tapes to stick on the windows and doors to ensure a tight seal to prevent any air from coming through) and making our IQAir Healthpro air-purifier work extra hard. We are also diligent in donning our N95 masks when the PSI level hits unhealthy level.  

We are kind of disturb to see many people taking the haze too lightly and still do not wear N95 mask (surgical masks, tissues or handkerchiefs will not protect you at all!) at outdoors. According to Wikipedia, the PM 2.5 particles which made up the majority of haze particles is the deadliest form of air pollution due to their ability to penetrate deep into the lungs and blood streams unfiltered, causing DNA mutations, heart attacks, premature death and lung cancer, thus even short-term exposure can be damaging!  
 

Hence, I do urge my Singaporean and Malaysian readers to take good care during this haze period and be proactive in taking care of your own/family's health. 


Milo Ice-Cream (eggless version) 
美禄巧克力冰淇淋(无蛋版


Ingredients: 
550ml heavy whipping cream (with at least 36~40% fat)
225ml fresh milk 
50g brown sugar (will reduce to 30g next time as I prefer less sweet)
1/8 tsp sea salt
1/2 vanilla bean pod (cut lengthwise and scrape seed) 
130g milo powder (I prefer Australian recipe Milo which is tastier and more fragrant)

食材:
550毫升 鲜奶油(用含有36~40%脂肪的) 
225毫升 鲜牛奶 
50克 黑糖 (下次做,会用30克因为个人不喜欢太甜)
1/8 小勺 海盐
半支 香草豆荚 切半,刮出香草籽)
130克 美露巧克力粉(我用澳洲配方的美禄,比较美味


Method 方法:

1. Combine the milo powder, milk, sugar, salt and vanilla bean seeds in a pot and warm up everthing over medium heat until the sugar has completely dissolved.  

1。美露巧克力粉,牛奶,糖,盐和香草籽放入锅中用中火煮至糖完全溶化。




2. Pour the whipping cream into the ice-cream maker tin, followed by the milo mixture. Mix well before chilling in the freezer for two hours.  (If you do not own an ice-cream maker, put the combined mixture into a freezer safe container and place it in the freezer. Remove every hour to stir with a fork, repeat for 4~5 times as this will improve the texture and prevents the ice-cream from being icy. You may eat it like soft serve or frozen hard. )  

2。鲜奶油倒入冰淇淋容器,再加入美露巧克力混合物。搅拌均匀后,放入冰箱冷冻大约两小时。(如果没有家用冰淇淋器,把混合物直接倒入冷冻安全的容器,并放置在冰箱里。每隔一小时,拿叉子搅拌。重复4~5次,直到冰淇淋变凝固。这样冰淇淋的口感才会滑顺醇厚。)




3. Once chilled, process in the ice-cream maker for 50~60 minutes. Serve directly as soft serve from the ice-cream maker. 

3。冷却后,放入冰淇淋机搅拌50~60分钟。直接享用。







4. OR transfer to a freezer-safe container, cover and freeze in the refrigerator until solid before serving.

4。或转移到冷冻安全的容器,盖好再放进冰箱,冷冻直到凝固再享用。

If you reduce sugar, your ice cream will be a bit harden then follow the recipe. Sugar on ice cream is not only add sweetness but also suppress freezing below 0 degrees celsius. Sugar in desserts usually have more role other then add sweetness alone.

Hi Herbal, thanks for the note. For this milo ice-cream, it's on the softer side as compared to other ice-cream I have done before, probably due to the Milo powder which already has sugar in it. I would actually prefer it to be more frozen, in this case by reducing the sugar in this recipe, I would be able to achieve the texture I like. Thanks again!

Hi Cheryl,

So sorry for my late visit as I was away for my holidays...

Heard about the bad haze in Singapore. I hope things will get better now. You are right that we must protect ourselves from the haze as the unstable carbon material can cause cancers in our body.

Stay at home and eat healthy Milo ice cream is a great haze combating idea :)
