Matcha & Beetroot Butter Cake for my 15th Wedding Anniversary 抹茶与甜菜根奶油蛋糕庆祝水晶婚 (中英食谱)

I was cracking my brain hard again....thinking what cake to bake for my 15th crystal wedding anniversary. Last year, I created the 'Non-Bake Rose cheesecake' and it was well received by hubby as well as many readers who have tried the recipe.  You might think why is it so difficult to decide what to bake, I could have just decided on a sponge cake and decorated with loads of whipping cream. Well...my hubby dislikes cakes with whipping cream and he is not one who can be pleases easily. (oops...Shhhh! ) Thus, I have to come up with a plain, yet pretty and delicious cake to please both his eyes and palate....haha! After some thoughts, I decided to adapt from my super moist 'Almond Butter Cake' and baked this super healthy, all natural and delicious Matcha Beetroot Butter Cake the night before the special occasion on 27 May. 

Last Wednesday morning, I showed him the cake and he said, "Interesting!". I cut a slice for him, he took a bite and said, "Hmm...taste good!" As I mentioned in my previous post, my hubby isn't one who praises easily too, so if he says good, it must be so! ;p 



We had a nice dinner celebration that night and received this complimentary chocolate fudge cake. :) 





Matcha & Beetroot Butter Cake 
超湿润杏仁奶油蛋糕
(adapted and modified from Baking Taitai's Super Moist Almond Butter Cake)

Ingredients:(for one Mastrad reversible heart shaped mould or bake a single flavour using 8~9 inch mould)

240g all purpose/plain flour (I used Blue Jacket patent flour)
1.5tsp baking powder
200g unsalted premium butter, softened (I used President butter)
175g caster sugar 
2 big eggs (I used 80g ones) 
240ml fresh milk





食材:(够做一个Mastrad双面心型蛋糕模或用8~9寸模做单口味的蛋糕)

240克 普通面粉 (我用水手牌特级粉心粉)
1.5茶匙 发粉
200克 无盐优质牛油,室温软化 (我用总统牛油)
175克 细砂糖
2 大粒鸡蛋(我用一粒80克的)
240毫升 鲜牛奶


Matcha paste - 2 tbsp hot water mixed with 1 tbsp pure matcha powder
抹茶糊- 1汤匙纯抹茶粉加2汤匙热水混合均匀

Beetroot paste - 2 tbsp hot water mixed with 2 tbsp beet root powder
甜菜根糊 - 2汤匙甜菜根粉加2汤匙热水混合均匀



​Methods方法: 
​1. ​In a medium bowl, whisk together flour and baking powder.

泡打粉放入碗中,搅拌均匀




​2. Use an electric mixer, cream the butter and sugar on medium speed until fluffy for about 2 minutes. 
2。用电动搅拌器,以
中速搅打牛油和糖大约2分钟直到蓬松。



​3. Beat in eggs gradually ​until well-combined.

逐渐打入鸡蛋直到混合均匀。


4.​ ​On low speed, add flour mixture in 3 parts​ (​ 1/2, 1/4 and 1/4​)​, alternating with milk. Switch mixer to medium and beat for 10 to 15 seconds, just until batter appears uniform.
4。用低速,面粉分成3部分(1/2,1/4和1/4)加入混合,之间与牛奶交替。搅拌机调到中速,搅打10到15秒,直到面糊均匀即可。




5. Divide the batter into 2 portions - 2/3 portion add in the match paste and 1/3 portion add in the beet root paste. Mixed well. 
5。面糊分两份 - 2/3份加入抹茶糊,1/3加入甜菜根糊。 搅拌均匀。




6. Pour the matcha batter into the heart-ring mould and bake in a preheated oven at 160 degrees Celsius for 45~50 minutes. Remove to cool after baked.
6。抹茶面糊倒入模,在预热烤箱以160摄氏度烘烤45~50分钟,取出待凉。




7. Pour the beet root batter into the heart-shaped mould and baked at 160 degree Celcius for 30~35 minutes. Remove to cool after baked.
7。甜菜根面糊倒入模,在预热烤箱以160摄氏度烘烤30~35分钟,取出待凉。




8. Decorate as desired.

Hi Cheryl! Happy 15th anniversary! I know what you mean about husbands being hard to please! My husband only gives comments such as "okay", "not bad", "nice" to most of the cakes I bake, so hard to get constructive feedback from him! Or maybe I'm the one being hard to please by his feedback... oops!
