30 minutes Healthy Matcha Yogurt Muffins 30分钟健康酸奶抹茶马芬(中英食谱教程)



Last night, my little one before going to bed suddenly told me that he wanted to bring muffins for school recess tomorrow. Err...I was looking forward to my personal time after he has gone to bed but on the other hand, I didn't want to disappoint him as he was looking at me eagerly, waiting for my 'ok' answer. 

I am glad I have this quick and easy muffin recipe which can be completed in 30 minutes. I have made this in Chocolate flavour before and if you prefer Chocolate over Matcha, you can find the recipe here. This recipe is very straight forward, just combined the dry ingredients and wet ingredients seperately first then mix together. All you need is 2 bowls, one hand whisk and one rubber spatula. Easy Peasy right? :p

昨晚,我家的小瓜在临睡前,突然说明天要带马芬去学校, 休惜吃。 为了不让他失望,即使这么迟了,还是答应了他。还好有这个即块又简易的食谱,让我在30分钟内完成。之前有做过巧克力口味的,有兴趣的话,可以按看食谱。

Added Azuki bean fillings as I found a can in the pantry. 


30 minutes Healthy Matcha Yogurt Muffin
30 分钟酸奶抹茶松饼

Ingredients: (makes 12)

200g Plain Flour
100g Caster Sugar
15g Matcha Powder
1 tsp Baking Powder
3/4 tsp Baking Soda
1/4 tsp salt
1 Egg (60g)
1/2 tsp Vanilla Extract
250g Greek style Yoghurt
85g Unsalted Butter, melted (can replaced with 70ml of Sunflower or canola oil)

Canned Azuki Beans 




主料:(可做12个)

200克 普通面粉 
100克 幼糖
15克 抹茶粉
1茶匙 发粉
3/4茶匙 小苏打粉
1/4茶匙 盐
1粒蛋(60克)
1/2茶匙 香草精
250克纯酸奶 (建议用质地厚的希腊式酸奶)
85克牛油,融化 (可以用70毫升的日葵或菜籽油取代)
一罐蜜红豆

Method
方法:

1. Preheat oven at 200 degrees celsius, prepare 12 muffin cups.

1。预热烤箱以摄氏200度, 准备12个松饼烤杯。

2. In a large bowl, combine the first six dry ingredients.
2。在一个大碗里,结合以上的六种干配料。




3. In another bowl, use the hand whisk to beat the egg, vanilla extract, yoghurt and butter. 
3。在另一个碗里,放入蛋,香草精,酸奶和黄油一起拌均。




4. Gently fold this mixture into the dry ingredients until all ingredients are incorporated. Take care not to over mix, the final mixture is of lumpy texture.
4。然后倒入结合的干配料,用橡皮刮刀轻轻翻拌均匀。小心不要过度搅拌。混合在一起后的质感是块状的。



5. Fill muffin cases till 80% full. (I have added canned azuki/red bean paste in between the fill.) 

5。倒入松饼杯八分满. (我加了罐头红豆馅)




6. Bake for about 12-15 minutes or until a skewer comes out clean.
6。烘烤约12-15分钟,或至到竹签插入中心没有沾粘就可以取出。

Hi-5 Yingstar, I'm a huge matcha fan too! I simply love matcha and do matcha bakes very often. I've got more than 10 matcha recipes in my blog, do find time to try them out! Happy baking!

Hi, (you didn't leave your name so I can't address you)
If you are based in Singapore like me, you can buy the matcha powder (the same Japanese brand as shown in my ingredients photo) from either Isetan supermarket or at certain NTUC Finest outlets like Bt Timah Plaza. You can also find matcha powder in baking supplies shop like Phoon Huat but I find it less fragrant and looks artificial, seems like colouring has been added to it and it is not natural as compared to those made in Japan.

Hi, matcha is also known as green tea powder to some. Yes, you can use it if it is of baking grade. If not, your bake will not be as fragrance.

Hi Shannon, if you are residing in Singapore, you can get the canned azuki beans in the Japanese food section at Fairprice Finest, cold storage, Meidi-ya, supermarkets.
